Meatless Meals
Those who know my family know that my dad raises Holstein steers for beef. And we love it here at our house. However, I know that the environmental footprint of raising beef is pretty large, even when it’s small-farm raised.
So, we make an effort at our house to plan at least one meatless meal a week. Eating more plants is healthier for all of us and, when done mindfully, can lessen our impact on the planet through decreased water, energy and transportation inputs.
Our favorite is a spinach and lentil pasta with caramelized onions, but we also have enjoyed Three Sisters Soup, Tortellini with Pesto, Ramen Noodles, Asparagus Soup with some crusty bread, and the girls’ favorite: Breakfast for Dinner!
